Will gear sensors work with internally geared bikes?

Will gear sensors work with internally geared bikes? Or are there any other problems installing a Mid Drive Kit on a bike with internal gears (Shimano Nexus 8)? ...

Yes, the gear/shift sensors work fine on IGH hubs, either with single or dual push-pull cable shifters. Not with the DI2 or other electric shifters, of course/unfortunately.

IMHO, the shift sensor is a must-have on the wide-range hubs, 5-speeds and up, especially should you choose the BBSHD.

You don't need a gear sensor with an internal hub. Better to shift not under load anyway. I have an Alfine 8 and Rohlof XL on fat bikes with Ludicrous controllers and have never had an issue.
